'Skinny' Bruschetta

Cut a ciabatta loaf into slices around 1-2cm thick (about 20-30g per slice)

Lay on a baking sheet and spritz each side of the bread with two sprays of olive oil.

Squeeze a little garlic purée on the back of a teaspoon and rub evenly over the surface of each ciabatta slice. (Alternatively rub with a peeled clove of garlic)

Season with salt and pepper and bake at 200 for 5 mins until golden.

Top with sliced tomatoes, fresh basil leaves and a little extra sprinkle of sea salt.
