'Skinny' Bruschetta

'Skinny' Bruschetta
  1. Cut a ciabatta loaf into slices around 1-2cm thick (about 20-30g per slice)

  2. Lay on a baking sheet and spritz each side of the bread with two sprays of olive oil.

  3. Squeeze a little garlic purée on the back of a teaspoon and rub evenly over the surface of each ciabatta slice. (Alternatively rub with a peeled clove of garlic)

  4. Season with salt and pepper and bake at 200 for 5 mins until golden.

  5. Top with sliced tomatoes, fresh basil leaves and a little extra sprinkle of sea salt.
